Description
This rum cake has many guises, Black Cake, Great Cake and Rum Cake. It is the base of every wonderful birthday cake, wedding cake, christening cake of the west indies. Every island has their version, and this is my take on it. It should have its on instagram page! It contains everything a fruit cake should have, minced dried fruit, soaked for at least 3 months! in all that great Bajan Rum along with sherry and stones ginger wine. Come on … try some… you won’t be disappointed! (does not contain nuts – only if personally required)
